Vegan Chocolate Orange Cake

  • One whole medium orange (or two small oranges)
  • 60g dark chocolate
  • 80g vegan margarine (butter is fine if non-vegan)
  • 150g almond meal
  • 50g self-raising flour
  • 1 Tbsp cocoa powder
  • 100g white sugar (or preferred equivalent)
  • ½ tsp of vanilla bean
  1. Cut the top of orange off and steam for 30 minutes on stove top, steam oven or Thermomix (make sure you have enough water in TMX bowl). Allow to cool.
  2. Place chocolate and margarine in TMX bowl and melt content on 37C, Speed 1 until well combined. Alternatively, melt ingredients together with double boiler, or via induction cooktop or microwave. Allow chocolate mixture to cool.
  3. Add cooled orange to TMX and blitz on Speed 10 for a few seconds until ingredients are well combined and fairly smooth. If chocolate mixture was not melted in the TMX, add to pureed orange mixture. Orange can be pureed in food processor if not using the Thermomix.
  4. Add almond meal, flour, cocoa powder, sugar and vanilla to TMX bowl or food processor. Combine well on Speed 4 for a few seconds.
  5. Pre-heat oven to 170C (335F) or 150C (300F) for fan-forced. Line a small/medium (18cm wide) round cake tin with baking paper, or grease the tin well.
  6. Pour cake mixture into cake tin, spreading evenly. Bake cake for one hour. After one hour, place a skewer in centre. If skewer comes out fairly clean (no raw mixture), then the cake is ready. Texture of cake when cooled will be quite moist due to orange.
  7. For icing, mix one Tbsp of cocoa powder with ½ cup of icing sugar or agave sugar, and ½ cup of vegan margarine. Combine until smooth by hand, Thermomix or food processor.
